Nectarines are great a source of beta-carotene which improves eye health, vitamin C, & lutein. These members of the Peach family are rich in fiber to aid in digestion, help prevent cancer, possess anti-diabetic properties, aid weight loss, help regulate your blood pressure, lower your cholesterol levels, and ultimately improve your heart health. The antioxidants improve immunity, promote anti-aging by enhancing your skin’s health and because they are high in iron, help prevent anemia.
3 Ripe Nectarines
3 TSP Brown Sugar
2 TBSP Honey
6 TBSP Greek Yogurt
Toasted Almonds for Garnish
Preheat oven to 350 Degrees F. Wash and cut nectarines in half, and remove pits. Spray a baking dish or pan with nonstick spray and place nectarines in pan skin side down.
Mix brown sugar with honey and drizzle a half TSP over the top of each Nectarine. Bake for 25-30 minutes at 350 Degrees F. Remove from oven and place nectarines in a serving dish. Top each nectarine with 1 TBSP of Greek yogurt & garnish with toasted almonds.
